When I first started keto, I was basically starving myself trying to hit some arbitrary fat macro I read online. Bad idea. Ingredients

  • 1/2 cup coconut oil, melted
  • 1/2 cup natural peanut butter (no sugar added)
  • 1/4 cup cocoa powder

  • 1 tsp vanilla extract
  • Pinch of sea salt
  • Optional: 2 tbsp sugar-free chocolate chips

Instructions

  1. Mix the melted coconut oil and peanut butter in a bowl until smooth. Don’t worry if it looks a bit separated at first — just keep stirring.

  2. Add cocoa powder, sweetener, vanilla, and salt. Whisk until everything’s combined and there are no cocoa lumps. Taste and adjust sweetness if needed.

  3. Fold in chocolate chips if you’re using them. I usually do because texture matters.

  4. Pour into silicone molds or an 8x8 pan lined with parchment. I prefer molds — makes portion control automatic.

  5. Refrigerate for at least 2 hours until firm. If using a pan, cut into 16 squares once set.

Tips

Look, coconut oil melts fast, so work quickly once it’s mixed. If your kitchen’s warm, the mixture might get too soft — just pop it in the fridge for 10 minutes.

Storage is simple: keep them in the fridge in an airtight container. They’ll last about a week, maybe longer if you can resist them that long.

Wanna switch it up? Try almond butter instead of peanut. Or add a bit of espresso powder for a mocha version. My kids actually prefer the almond butter ones, which surprised me.
