3-Ingredient Vegan Chocolate Chip Cookies That Actually Slap

Okay, listen— it’s 7pm, Mia’s asking for cookies (again), and I literally have ZERO energy to deal with a million ingredients. But also… I’m not about to be the mom who says no to homemade cookies, you know?
So I tried this absolutely ridiculous 3-ingredient situation. And I’m not even kidding, these are actually good. Like, good enough that my Puerto Rican mom asked for the recipe good. (She still thinks I’m crazy for the whole vegan thing but whatever.)
THREE INGREDIENTS, PEOPLE. That’s it. Done. No weird flax eggs, no complicated substitutions. Just three things you probably already have.
Ingredients
- 1 ripe banana (the mushier the better, honestly)
- 1 cup rolled oats
- 1/3 cup vegan chocolate chips (I use Enjoy Life brand)
Instructions
Preheat your oven to 350°F. Mash that banana like your life depends on it — I literally just use a fork and go to town for like 30 seconds.
Mix in the oats and chocolate chips. The “dough” is gonna look weird and chunky. That’s normal! Don’t panic.
Drop spoonfuls on a baking sheet (I don’t even grease mine but you can if you want). Bake for 8-10 minutes until they’re golden-ish.
Let them cool for like 2 minutes. That’s it. Done. Literally takes longer to preheat the oven than to make these.
Tips
Okay so — use a banana that’s almost too ripe. Like, the one you were gonna throw away? Perfect. And don’t overthink the mixing. Just dump everything together and call it a day.
If you don’t have chocolate chips, raisins work (but Mia will judge you). These keep for maybe 3 days in a container but let’s be real, they’ll be gone by tomorrow.
Oh! And they’re naturally gluten-free if you use certified GF oats. Just saying. 💯
